Simple, easy and yummy Vegetable Kurma


Ingredients:
Chopped vegetables(carrot, potato, beans, cauliflower, peas...) - 2 cups
Onion - 3
Green chillies -2
Coconut - 1 cup
Masala items - Cardamom, cinnamon, cloves, bay leaves - each 1 piece
Saunf  -1/2 tsp
Ginger - a small piece
Garlic - 3-4 pods
Salt as per taste


Method:
Cook the chopped vegetables and keep aside (do not overcook them). Grind together coconut, green chillies, ginger, garlic and all the masala items into a fine paste. In a pan, heat some oil, add onion. Saute them until it turns golden brown in colour. Add the grounded paste. Add water and allow it to boil till the raw smell goes. Add salt and the vegetables. Mix well. Boil for another 5-8 min. Serve hot with chapathi or paratha.
